Mini Sweet Pepper Nachos

Mini Sweet Pepper Nachos

Serves 4

21-Day Fix Container Count: 1 ½ Green, 1 ½ Yellow, 1 Blue

  • 2 ears corn grilled (or 1 1/2 cups of frozen / canned corn)
  • 1 1/2 cups of black beans (dried then cooked or 1 15 oz can- rinsed)
  • 1 cup cherry tomatoes quartered
  • ½ red onion chopped
  • ¼ cup cilantro chopped
  • 3-5 sweet mini peppers chopped
  • 1 jalapeno chopped
  • 1 lime juiced
  • ½ tsp black pepper
  • ½ tsp cumin
  • ¼ tsp kosher salt
  • 10-12 sweet mini peppers, halved and cleaned
  • 1/2 cup shredded sharp cheddar cheese

Instructions:

  1. Pre-heat oven to 350 degrees.

Balsamic Peach Crockpot Chicken

Serves 4

21-Day Fix Container Count: 1 Red, ½ Purple, 3 Tsp

Ingredients

  • 5 – 6 boneless skinless chicken thighs
  • 3/4 cup balsamic vinegar
  • 1/4 cup honey
  • 1 small sweet onion, thinly sliced
  • 16 sliced peaches (I prefer fresh cut and

pitted if in season otherwise try to find

peaches canned in water or frozen)

  • 1 tsp. dried rosemary
  • Sea salt and pepper

Instructions

  1. Put all ingredients in crockpot and cook

3- 4 hours on low. (5 hours if the chicken is

frozen)

saucepan. Bring to a boil and reduce until it

Serves 4-6

21 Day Fix Servings: 1 Orange, 1 tsp.

Ingredients

For the dressing

* 1/4 cup oil (grapeseed, sunflower or safflower)

* 1 Tbsp sesame oil

* 3 Tbsp tahini

* 3 Tbsp tamari or soy sauce (I only had soy so I used that)

* 2 Tbsp rice vinegar (unseasoned)

* 1 tsp sambal oelek or sriracha (you can use more if you like it hotter – I’m wimpy about heat)

* 1 Tbsp honey

* 1 large garlic clove, pressed or finely chopped

Ginger Soy Flank Steak with Sugar Snap Peas

Serves 5

21-Day Fix Container Count: 1 Red, 1 Green, 1 tsp. (served with Snap Peas)

 

Ingredients:picture1

  • 2-inch slice fresh ginger, peeled, finely chopped
  • 3 cloves garlic, finely chopped
  • 1 Tbsp. crushed red pepper
  • 2 Tbsp. fresh lime juice
  • 1 Tbsp. raw honey
  • ¼ cup reduced-sodium soy sauce
  • 1 tsp. sesame seed oil
  • 1½ lbs. flank steak (or tenderized round steak)

 

Instructions:

  1. Combine ginger, garlic, red pepper, lime juice, honey, soy sauce, and oil in a small bowl; whisk to blend.
  2. Place steak in a shallow dish. Pour ginger mixture over steak; marinate, covered, turning once, for 1 hour in the refrigerator.

Turkey Zoodle Soup Recipe

Serves 6

21 Day Fix: Per Serving 3/4 red, 1 green, ½ Yellow

Ingredients:

  • 1 Tbsp extra virgin olive oil
  • 1 small yellow onion, diced
  • 1 cup chopped celery
  • optional: 1 clove garlic or shallot, minced
  • 2 cups freshly made Zucchini Noodles
  • 1 cup chopped carrots
  • 6 cups free-range, prepared chicken broth, or vegetable broth
  • 3 bay leaves
  • 1 lb. precooked & diced Turkey breast {or use chicken breast}
  • 1 tsp chopped fresh parsley

 

Instructions:

  • In a large stock pot, heat oil over med-high heat.
  • Cook onion & celery for about 3 minutes, then add garlic & zucchini noodles, toss/stir consistently for 2-3 minutes, then remove all cooked vegis from the pot, & set them aside.

Zucchini Noodle Pad Thai

21 Day Fix: Per Serving 2 green, 1/2 blue, 2 tsp
Ingredients:
• 2 medium zucchini
• 1 cup shredded cabbage
• 1 cup sliced red bell pepper
• 2 scallions, thinly sliced
• ¼ cup raw peanuts
for the sauce:
• 2 tablespoons creamy peanut butter (or almond butter)
• Juice of 2 limes
• 2 teaspoons gluten-free tamari (or low sodium soy sauce)
• 1 teaspoon sriracha sauce (or asian hot sauce of choice)
• ½ teaspoon ground ginger

• Water as needed to thin the sauce
