21 Day Fix Banana Oatmeal Cookies

This is from Beachbody’s new program 21 Day Fix Recipes Banana Oatmeal Cookies. This takes a few minutes to prepare and my favourite clean eating recipe in this book. For those that follow this eating plan, you can only eat 2 cookies (which is one yellow container). As usual, watch my video below for visuals:

  • 1 cup old-fashioned rolled oats
  • 2tsp ground cinnamon
  • 1/2 tsp sea salt
  • 2 ripe medium bananas, mashed
  • 1/4 cup golden raisins
  • 1/4 cup chopped raw walnuts

Preheat oven to 350. Mix the oats, cinnamon and salt together. Mash the bananas and mix the raisins and raw walnuts into the mash bananas. Combine the wet mixture and dry mixture together, I used a large cookie scoop and yielded 8 uneven servings, so I think its safe to say that a medium size cookie scoop would be best to prepare this cookie. Tip: flatten the cookie down (trust me on this one). Bake for 10-15 minutes

10 Mommy-Approved Methods to Make Mornings Easier

Oh, the joys of motherhood, womanhood and all the other “hoods” we’ve been blessed with as women. Along with these titles comes being the morning organizer, cheerleader and drill sergeant. It takes a long time (and maybe a few kids) to get mornings down right.

As a mom, you probably have many different projects going on simultaneously, so morning organization is a must, especially if you don’t consider yourself a “morning person.” Here are some methods to follow to help your mornings run a little smoother!

Three Bean Vegetarian Chili

This soup has a mild chile flavor. If you want more heat, increase the amount of chili powder and don’t seed the jalapeños.

Yield: 8 servings (serving size: 1 cup soup, 1 tablespoon sour cream, 1 tablespoon cheese, and 1 1/2 teaspoons cilantro)


  • 1 3/4 cups organic vegetable broth
  • 1 cup chopped onion $
  • 1/4 cup chopped seeded jalapeño pepper (2 peppers)oh-three-bean-vegetarian-chili-l
  • 2 teaspoons chili powder
  • 2 teaspoons ground cumin
  • 2 teaspoons Worcestershire sauce
  • 1/2 teaspoon salt
  • 2 garlic cloves, minced
  • 2 (15-ounce) cans no-salt-added black beans, rinsed and drained
  • 2 (14.5-ounce) cans diced tomatoes, undrained $
  • 1 (15-ounce) can no-salt-added pinto beans, rinsed and drained
  • 1 (15-ounce) can no-salt-added kidney beans, rinsed and drained

Butternut Squash-Parsnip Soup


  • oh-butternut-squash-parsnip-soup-l2 cups chopped sweet onion (1 large)
  • 2 cups chopped parsnip (3 large)
  • 1 1/2 cups chopped peeled Granny Smith apple (about 1 large)
  • 1/4 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 3 cups water
  • 2 cups fat-free, lower-sodium chicken broth $
  • 3 (12-ounce) packages frozen butternut squash, thawed
  • 2 tablespoons whipping cream
  • 1/8 teaspoon paprika
  • 1/8 teaspoon ground cumin
  • 1/2 cup light sour cream (optional)
  • 8 teaspoons chopped fresh chives (optional)


  1. 1. Combine first 8 ingredients in a 5-quart electric slow cooker. Cover and cook on LOW for 6 hours.
  2. 2. Place one-fourth of squash mixture in a blender. Remove center piece of blender lid (to allow steam to escape); secure blender lid on blender. Place a clean towel over opening in blender lid (to avoid splatters). Blend until smooth. Pour into a large bowl. Repeat procedure with remaining squash mixture. Stir in whipping cream, paprika, and cumin. Ladle soup into bowls; top each serving with sour cream and chives, if desired.

  • ½ cup water
  • ½ cup red grapes
  • 2 tsp all-natural peanut butter

Whole Wheat Protein Pancakes

Total Time: 19 min.
Prep Time: 10 min.
Cooking Time: 9 min.
Yield: 6 servings, 1 pancake each


1 cup nonfat cottage cheesef103def48bd993079b3229685c988562
6 large eggs
½ cup whole wheat flour (or ¼ cup whole-wheat and ¼ cup barley flour)
1 Tbsp. coconut oil, melted
1 pinch sea salt
1 tsp. pure vanilla extract
¼ cup nonfat milk
Nonstick cooking spray

1. Place cottage cheese, eggs, flour, oil, salt, and extract in a blender or food processer; cover. Blend until smooth.
2. Add milk slowly to reach batter consistency.

Egg White “Muffins”

Yield: Makes 12 full size muffins


  • 2 regular cartons 100% pure liquid egg whites (or 1 large carton- I buy a 6 pack of regular cartons at Costco)
  • Vegetables of your choice- Suggest spinach, multi-colored bell peppers, mushrooms, and/or onions
  • Pepper
  • Garlic and/or Onion Powder

Directions (Easy Peasy!)

  1. Grease a muffin tin with olive oil spray
  2. Fill each muffin compartment with chopped vegetables
  3. Sprinkle with pepper, onion powder, and garlic powder
  4. Fill each compartment to the top with egg whites
  5. Bake at 350 for 20-25 minutes

Bonus Tips

  • These can be eaten by themselves or you can put them on a whole wheat English muffin or whole wheat mini-bagel and create a breakfast sandwich
